Cannabis + Pumpkins: Make your Halloween delicious with CannaPumpkin Cookies

Happy Halloween! If you’re carving up a pumpkin or two today, you may work up a bit of an appetite. You may even be looking for something sweet. If that’s the case, we’ve got a recipe for you. At Indiva, we believe in approaching every project from the viewpoint of sustainability and in that vein, below is a fun recipe for turning those pumpkin guts into a delicious cannabis treat.

Cannabis-Infused Pumpkin Cookies

Before you get started, it’s important to whip up a little cannabis butter and during the process, add a little vanilla to help round out the flavours of the finished product.
As a reminder, once you’ve finished baking your cannabis treats make sure to put them in a secure container away from where those under the legal age of consumption can access them.

Pumpkin puree

A pie pumpkin (smaller and sweeter) is recommended, but for the purpose of this recipe we are using a jack-o’-lantern to reduce organic waste. After your jack-o’-lantern has lived its best life on your front door step, cut it half and then into smaller chunks to fit into a microwave-safe dish. Put an inch of water in the pan and place the pumpkin chunks into the microwave for 15 minutes (or on the stove in a pot with a bit more water). This will steam the pumpkin until its soft enough for you to scrape out the good stuff. After the pumpkin is sufficiently steamed, take a large spoon to gently scrape the pumpkin away from the skin. If it’s not coming away easily, steam the pumpkin for another few minutes until it separates easily.
Take the scraped-away pumpkin and strain it through a cloth to remove excess water and then puree it. Once you have your pumpkin puree, you are ready to get started.

Cookies

Preheat the oven to 350
Ingredients:

  • 1 cup of pumpkin puree
  • 2 ½ cups of all-purpose or gluten-free flour
  • ½ cup of cannabutter (soft and melty)
  • 1 ½ cups of granulated sugar
  • 1 egg
  • 1 teaspoon of cinnamon
  • 1 teaspoon of pumpkin pie spice
  • ½ teaspoon of salt
  • 1 teaspoon of baking powder
  • ½ teaspoon of baking soda

Recipe:

  1. Mix all dry ingredients together in a bowl and set aside
  2. Beat your sugar and butter in a bowl and then add in the pumpkin and eggs
  3. Gradually add the dry ingredients to the butter, sugar and pumpkin mixture
  4. Once mixed, place dollops of batter on a greased cookie sheet
  5. Bake for 18 minutes checking regularly for firm edges
